It looks like it uses entities.png for the texture (and changes the color accordingly, like you said). You can change that with a mod, but not on a per-mappack basis.

Here's a bug I'd forgotten until recently: the "load level" animation doesn't load sublevels correctly, it always brings the player to the main sublevel. Ideally, with this fixed, the animation could be used as a replacement for pipes. Does anyone have time to work on that?

For the unaware, the new controllers for the Switch are PC-compatible out of the box, no need for drivers. You just connect them via Bluetooth and they're good to go without any other setup. That sounds like a problem with your graphics card; make sure all your drivers are updated. The white boxes usually mean that the tileset is too big for your computer to load - as long as your computer isn't too terribly old, it should be able to run (especially if it's worked in the past).
