Wait what. Maurice and Saso aren't the only coders here, you know? And seeing other LOVE games, I'm pretty sure HD can be done. You can google it if you need to.

HD graphics are possible if you put the time and effort into it. However if you're hoping that Maurice, the developer for Stabyourself.net will do it for Mari0, you're shit outta luck, as there's next to no chance he'll do that.
So you'll have to do it yourself or hope that someone here will make one for you. Someone did try modding in the SNES graphics and can be found here, but it didn't ever get finished afaik.

Tilesets can be well over 1920x1080, the game on scale 5 is also big enough to be "HD". I don't know how this is a question.

so baisiccly lets say i have a size one and a size two mario sprite. if i put the size 2 sprite down and then play the game will it not chop off and actually look like its 32 x 32 instead of 16 x 16?
